Key Lime Pie Cup
All of this can be done the day before, which is why I really like this dessert. You have done all your heavy lifting and it’s all out of the way. Then all you have to do the day up the party or moments before serving dessert is assemble. You can serve this in a little glass or fancy cocktail glass. I love this idea as they are so elegant and delicious when served chilled at the end of your meal.

- 7 gram cracker
- 6 egg yolks
- 1/3rd cup of corn starch
- Salt a pinch
- 1 and ½ cup of water
- 1 cup sugar
- 2 tbsp. butter
- 2/3rd cup of lime juice
- 2 cup heavy
- 2 tbsp. powder sugar
- 1 tbsp. vanilla
1 Blend the gram cracker to make crush and keep aside.
2 In a bowl add yolks, cornstarch, a pinch of salt and whisk it until you get the smooth paste.
3 In a large saucepan add water, sugar and heat until the sugar dissolve. Slowly pour it into the egg mixture.
4 Put the mixture into the saucepan and cook until you get pudding-like consistency, add butter and lime juice and keep whisking.
5 Once it gets thickening remove it from heat and whisk for another few minute.
6 Cover the mixture with a plastic wrap and put it into the fridge.
7 In a mixing bowl, add heavy cream, powder sugar and vanilla and blend it or whisk it make thick whipped cream.
8 Put the gram cracker crush into a butter paper cup or into a simple fancy glass on top of it put the pudding and top it with whipped cream.
9 Garnish with some lime zest and a slice of lime. Serve chilled.
