Roasted Orange Chicken & Potato
Whether you prefer the classic preparation or something a little more creative, there’s an easy homemade orange chicken recipe for you.
This chicken is tangy and flavorful.
My take on the humble chicken breast yields a dish that is a delicious chicken roasted with fresh orange, fennel bulb and some potatoes which is bound to please you and your family.

Ingredients:
- 8 pieces of boneless chicken breast
- 2 potatoes cut into dices
- 2 orange (1 sliced and 1 juiced)
- 2 fennel bulb cut into slices
- ¼ cup butter
- 3-4 tbsp. olive oil
- 4-5 garlic cloves chopped
- 3-4 fresh rosemary springs
- 1 tbsp. chilli flakes
- 1 tsp black pepper crushed
- Salt to taste
Procedure:
1 Spread a foil paper on a baking tray and brush with butter and then arrange the chicken, potatoes, orange slices and the fennel.
2 In a bowl, whisk together orange juice, olive oil, garlic, chilli flakes, salt and pepper.
3 Pour the mixture over the chicken, making sure all the chicken is covered. Toss a bit if required.
4 Sprinkle generously additional salt and pepper if required.
5 In a preheated oven at 190 degrees Celsius, bake uncovered for about 60 minutes or until chicken and potatoes are cooked.
6 Serve optionally with green chutney and Lemon Slices.
