Creamy Spinach Soup
This is a very delicious cream of spinach soup in which the spinach in this recipe makes for a flavoursome and intriguing bright-green soup.
This delicious cream of spinach soup can be served with a few croutons on top.

Ingredients:
- 500 gram Spinach
- 2 tbsp. butter
- 2 tbsp. flour
- 1 shallot/ ½ onion chopped
- 1 cup milk
- 1 cup vegetable stock/water
- ½ cup cream
- ¼ tbsp. Oregano
- Squeeze of lemon
- Salt
- Pepper
- Dill leaves
Procedure:
- In a bowl put washed spinach, butter, shallot, stock and let it cook for 7-8 minutes.
- Add flour, milk, salt, oregano, pepper and keep stirring for 2 minutes.
- Pour the soup in a blender and puree it until smooth. Add cream and adjust seasoning.
- Heat through for 2 minutes.
- Serve with a spoon of cream/sour cream and some dill leaves.
